This easy and flavorful Fiesta Chicken Dip is the perfect appetizer. Throw all the ingredients in a slow cooker and a few hours later you have a warm appetizer to dip your favorite chips in! 



  • 2 boneless, boneless, skinless chicken breasts (can be frozen or fresh)
  • 1 can black beans, rinsed and drained
  • 1- 12-oz. bag frozen corn
  • 1- 16-oz jar of your favorite salsa (we like Pace Chunky Medium, but any will do)

For garnish: sour cream, guacamole, shredded cheese


  1. Line your slow cooker or spray with cooking spray to avoid sticking. Add the entire bag of corn to the bottom of the slow cooker.
  2. Place fresh or frozen chicken breasts on top of the corn.
  3. Sprinkle black beans on top of chicken. Then pour the jar of salsa over all the ingredients. Do not stir, but  make sure everything is covered with the salsa.
  4. Cook on the high setting for 1 hour. Then reduce to "low" and cook an additional 3-4 hours, until chicken is cooked all the way through. If using frozen chicken, you will need closer to 4 hours.
  5. Remove the chicken and shred and return to slow cooker. Keep on warm until you are ready to serve.
  6. Dip your favorite tortilla chips.
  7. Shredded cheese, guacamole, and sour cream can be added on top for more flavor.
