- 2 boneless, skinless chicken breasts (can be frozen or fresh)
- 1 can black beans, rinsed and drained
- 1- 12-oz. bag frozen corn
- 1- 16-oz jar of your favorite salsa (we like Pace Chunky Medium
Other Items You Need
- slow cooker
- tortilla chips for dipping
- optional toppings: shredded cheese, guacamole, and sour cream
How to make the Fiesta Chicken Recipe:
Step 1- Pour the frozen corn onto the bottom of the slow cooker.
Use a slow cooker liner or spray the slow cooker with cooking spray to avoid sticking before you add the corn.
Step 2- Place the chicken on top of the corn.
Then sprinkle the rinsed and drained beans on top of the chicken.
Step 3- Pour the entire jar of salsa on top.
Step 4- Cook on high for 1 hour.
After 1 hour, reduce the heat to low and cook for an additional 4 hours.
Step 5- Shred chicken and return to slow cooker.
Remove the chicken, shred with a fork and then return to the slow cooker. Keep on warm until you are ready to serve.
