Watermelon Cookies you can create in no time!
Yesterday was National Watermelon Day. It was a rainy, rainy day at our house. It clearly didn’t feel like Summer. And eating juicy watermelon outside on the porch was definitely not an option.
So we opted to make Watermelon cookies! My very festive cousin introduced us to watermelon cookies years ago. However, her version and many versions you’ll find online are a bit more time intensive (like chill the dough overnight) and required ingredients I didn’t have on hand.
Well folks, we didn’t have overnight to wait. With a little improvisation, we had watermelon cookies after all. And while they may not be as perfect looking, they still look just as adorable.
You don’t need anything fancy to make these cookies! I used our favorite sugar cookie recipe , but before baking, added some green food coloring. Then I used a large glass to cut circles because I don’t own a circle cookie cutter. 🙂 I cut each circle in half to make watermelon slices.
The key to good sugar cookies is to not over bake! Bake these for 7 minutes or less.
Use your favorite frosting recipe, add some red food coloring and don’t forget the mini chocolate chips placed in the frosting upside down. Eating fresh, seedless watermelon is awesome, but these cookies need seeds. They totally make the cookies cute. Wouldn’t you agree?
