My sister-in-law makes the most amazing salads. I am constantly asking her for the recipes because making salads are surely not my forte! But, this Spinach Tortellini Salad has become one of our new go-to recipes. I think I’ve made it 4 times in the last few weeks for Father’s Day, a Salad Social, and a few BBQs. Sorry neighbors and family!! It’s easy, delicious, and I usually have all the ingredients on hand, so how can I not?
The original recipe comes from NoBiggie, but I alter it slightly to make it simpler and include only things I know my family likes. We’re talking: tortellini, baby spinach, tomatoes, olives, parmesan cheese, and Brianna’s Asiago Caesar dressing.
We’ve served it as the main dish, as a side to Rosemary Ranch Chicken, or as choice at a potluck.

On a personal note…
Surely, after all the 4th of July celebrating we did, I’m feeling the need to get back on track with some healthier eating. Don’t get me wrong. There is nothing wrong with enjoying BBQs, festive treats, and drinks for the best holiday of the year. It’s just that I can tell a difference in my family’s mood (and certainly my waist!) when there isn’t enough of the wholesome stuff. So bring on salads.
