I used to think salads were boring...until I tried this pasta salad and the teriyaki bowtie pasta salad.
This Spinach Tortellini Salad has become one of our new go-to recipes. I think I've made it 4 times in the last few weeks for Father's Day, a Salad Social, and a few BBQs.

Here's what you need for cold tortellini salad- the best potluck salad.
- Your favorite frozen or refrigerated cheese tortellini, cooked
- baby spinach
- chopped tomatoes
- olives
- grated Parmesan cheese
- Brianna's Caesar dressing or your favorite Caesar dressing

How To Make Tortellini Salad
Making this award-winning tortellini salad is so easy.
First, boil the cheese tortellini according the package directions. Usually, the tortellini will be fully cooked in 3-5 minutes. Let pasta cool for about 10 minutes or longer.
Once the noodles are cool to the touch, stir in Caesar dressing until all the noodles are coated. If you are making this summer salad in advance, keep them refrigerated until you are ready to assemble.
Carefully stir in tomatoes, spinach, and chopped olives. Add more dressing until your desired consistency.
Place the best pasta salad back into the refrigerator and chill until you are ready to serve.
What If I don't have time to chill the salad?
The salad will still be delicious, but the longer the cheese pasta salad can chill the better it will be.
We have still enjoyed eating it right after making it--it just tastes better cold!

Easy Spinach Tortellini Salad

Description
A quick and easy salad you can whip up in 15 minutes or less! Perfect for dinners, last minute BBQs, or lunch.
Ingredients
- 1 package frozen cheese tortellini
- ½ bag baby spinach (more or less if you prefer)
- 2-3 chopped tomatoes
- 1 can olives, chopped
- parmesan cheese
- Brianna's Asiago Caesar Dressing
Instructions
- Cook tortellini according to directions on package. Once cooked, rinse with cold water and toss with some of the dressing.
- Stir in spinach, tomatoes, olives and more dressing until mixed.
- Sprinkle parmesan cheese on the top just before serving.
- Keep chilled until ready to serve. Add more dressing and cheese if you'd like.
