I have always been intimidated by making Spanish Rice. And quite honestly, I wasn't a big fan of Mexican food for a long, long time.
But when our good friends served this Spanish Rice to us, we all fell in love with it! It is now a regular at our house.
HOW LONG DOES IT TAKE TO MAKE?
This Mexican side dish can be made start to finish in 30 minutes if using a rice cooker...less in an Instant Pot! And if you have a rice cooker, most of the process will be hands-off. That's my kind of meal.
WHAT IF I DON'T HAVE A RICE COOKER?
You can certainly make this without a rice cooker, but it will require more babysitting. Follow the directions to make this on the stovetop.
Our rice cooker is used multiple times a week.
INSTANT POT SPANISH RICE DIRECTIONS
Easy Spanish rice gets even easier when you make this recipe in the Instant Pot .
Use the saute function to heat oil and puff the rice. Stir in the onions. Once they are transluscent, add the rest of the ingredients. Cook on high pressure for the time that your machine recommends cooking white or brown rice, respectively.

Easy Spanish Rice
Description
The perfect side dish for any Mexican-style meal. Throw in a rice cooker to make it extra easy!
Ingredients
- 3 Tbsp. vegetable oil
- 1 cup uncooked long-grain rice (brown works, too!)
- 1 tsp. garlic salt
- ½ tsp. cumin
- ¼ cup finely chopped onion
- ½ cup tomato sauce
- 2 cups chicken broth
Instructions
- Heat oil and add rice. Cook, stirring constantly until puffed and golden.
- Sprinkle with salt and cumin. Stir in onions and cook until tender.
- Stir in tomato sauce and chicken broth. Bring to a boil and then simmer for 20 minutes, or put in a rice cooker and cook until done.
