One batch of this recipe makes 12-15 muffins, depending on how full you fill the muffin tins. If you need more, feel free to double or triple the batch. It works out great every time.

Brown sugar muffins everyone loves!
- ½ cup margarine or butter, softened
- 1 cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 2 cups flour
- 1 cup milk or almond milk
- 1 tsp baking soda
- Cream butter and sugar together. Add in egg and vanilla and mix until creamy.
- Stir in flour, milk and soda until well combined.
- Pour into muffin tins lined with papers. Bake at 375 for 15 minutes.
