I don't have a collection of lunch boxes to fill every day (yet!), but I am constantly amazed at the creative ideas I see on Pinterest for lunch boxes. Food in festive shapes, all compartmentalized in vintage boxes and such. As much fun as that would be, I don't ever see it being realistic for me on a daily basis.
My mom had 5+ lunches to make every day and while they were simple brown bags filled with a sandwich, chips in a baggie, a quarter for milk, apple slices and a treat of some kind, I never realized how much effort that alone would be. You'll never see her types of lunches on Pinterest, but perhaps, maybe this simple Lunch Box treat that often gets forgotten will make it's debut there someday.
I'm talking about the plain Jane chocolate frosted graham crackers. Such a childhood memory for me!
Take a graham cracker and smooth on some homemade chocolate frosting and you've got a quick treat that is sure to please those little bellies! And big ones, too. They were also one of our favorite after school snacks.
And don't stress. This chocolate frosting recipe is about as easy as it gets. And there is a 99% chance you already have the ingredients in your kitchen. Even better.

Marilyn's Homemade Chocolate Frosting
Ingredients
- ¼ cup margarine or butter
- ¼ cup milk
- ¾ lb. powdered sugar
- ¼ cup cocoa
- 1 tsp vanilla
Instructions
- Beat all ingredients together until creamy.
Notes
Delicious on brownies, graham crackers, sugar cookies or cake.
It stores well in the fridge for up to 2 weeks.
