Healthy Mexican “Fried” Ice Cream
Do you celebrate Cinco de Mayo? We aren’t Mexican (and to be quite honest sometimes we forget why Cinco de Mayo is so important). However, we take any excuse to party and eat Mexican food around here!
I don’t know about you, but I love when a simple holiday tells me what’s for dinner. 🙂

But this year we made some Mexican “Unfried” Ice Cream. Guys, I’m a huge fan. And this may just be my new favorite treat. I couldn’t stop eating them! Which wasn’t a huge problem since they were healthy. No guilt!
You may have tried Mexican fried ice cream before, but this treat is just as good, and way healthier too!

I didn’t think so 🙂 Ok, so the homemade hot fudge may not be the healthiest, but everything else is! And even if you don’t drizzle hot fudge on top, you’ll still love these treats.
How you make Healthy Un-Fried Fried Ice Cream
Remember how I said they are healthy?
We experimented making fried ice cream a few years ago, and while it was good, I didn’t think it was worth all the effort or calories.
Then we decided to sprinkle the fried ice cream topping onto the ice cream, without frying it. I had forgotten how good that was until a few days ago when I was browsing Pinterest and came across a similar idea from SkinnyTaste. I altered the recipe and came up with our own version of a healthy Mexican-inspired dessert.
What You’ll Need
- vanilla frozen yogurt (or ice cream)
- corn flakes, crushed
- ground cinnamon
- popsicle sticks
How To Make Un-Fried Fried Ice Cream
FIRST you will scoop the frozen yogurt or ice cream into round balls. To do this, you’ll want to let it soften just a bit, but don’t let it melt too much or you’ll be working with a puddle! Once you have formed into a ball, place on a cookie sheet lined with wax paper and place in the freezer for about 2 hours.
Meanwhile, crush the corn flakes into small pieces. Stir in cinnamon.
Once the ice cream balls are firm, remove them from the freezer and roll into the corn flake and cinnamon mixture. I suggest only removing a few at a time so that the others don’t melt while you are dipping.
Once all the “fried” ice cream balls are covered in the corn flake mixture, stick a popsicle stick in the middle and return to the freezer.
Keep in the freezer until you are ready to serve…up to a few days is fine! If you are keeping them in the freezer more than a few hours, be sure to cover them so these fried ice cream treats don’t get freezer burned.
Once you’re ready to eat, you can drizzle homemade hot fudge on top or eat them plain. Either way is delicious!
