Thai Chicken Noodle Soup
Years ago, I realized we didn't have many great soup recipes. So I hosted "The Great Soup Search" and had readers submit their favorite soup recipes. I made each one and put the best soup recipes to the test.
My husband is not a soup lover, or I should say, wasn't a big soup fan until we started gathering hearty and delicious soup recipes.
This Thai Chicken Noodle Soup instantly became his favorite and years later, it still is one of the soups that frequents our dinner table.
Even though this soup a slower cooker soup, this thai-style soup is incredibly fast to make.
Ingredients
What I love about this easy soup recipe is that most of the ingredients are basic ingredients I usually have in my kitchen.
- canola or vegetable oil
- garlic
- chicken breasts, chopped
- turmeric
- cayenne pepper
- canned coconut milk or creamed coconut
- chicken broth or stock
- lemon or lime juice
- crunchy peanut butter
- thin spaghetti noodles
- scallions
- fresh cilantro

Thai Chicken Noodle Soup
- Total Time: 35 minutes
Ingredients
- 1 Tablespoon canola oil
- 1 clove garlic, minced
- 2 skinless, boneless chicken breasts, chopped into cubes
- ½ tsp. tumeric
- ¼ tsp. cayenne pepper
- 1 can coconut milk (or ½ c. grated creamed coconut)
- 3 ¾ cup chicken broth (or stock)
- 2 Tbsp. lemon or lime juice
- 2 Tbsp. crunchy peanut butter
- 1 c. thin spaghetti noodles broken into 2-inch pieces (or thread egg noodles)
- 1 Tbsp. chopped scallions
- 1 Tbsp. chopped fresh cilantro (optional)
- salt and pepper, shredded coconut, finely chopped fresh red chili to garnish
Instructions
- Fry garlic in oil for 1 min.
- Add chicken and spices. Stir fry 3-4 min.
- Slowly pour creamed coconut (or coconut milk) into hot stock until dissolves. Pour over chicken. Add lemon, peanut butter and noodles.
- Cover and simmer 15 min.
- Add scallions and cilantro and season to taste.
- Simmer 5 minutes more.
- For garnish: in small, dry skillet, heat coconut and chili 2-3 min. Stir often, until coconut is light brown. Sprinkle over soup individually.
Notes
Substitutions That Work: I never have creamed coconut, scallions, or thread noodles on hand. Instead, I use canned coconut milk, thin spaghetti noodles and onions and still have delicious results.
