This is a simple, from-scratch recipe that I used to whip up these festive cupcakes for St. Patrick’s Day.Print
- 2 cups sugar
- 1 3/4 cup flour
- 3/4 cup cocoa
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 1 cup milk
- 1/2 cup oil
- 2 tsp. vanilla
- 1 c. boiling water
- Combine all dry ingredients using a whisk to sift and mix.
- Add the eggs, milk, oil, and vanilla. Mix with electric mixer for 2 minutes until smooth.
- Stir in boiling water with spatula and pour into pan.
- Bake 30-35 minutes for cake, 20-25 minutes for cupcakes.
